What you're seeing here is the entire underside right before the midsole is slapped on.
The beige you're seeing in between the liner is the full leather insole.
The actual upper leather is splayed outwards, so there's no real void underneath the front part of the foot to be filled in, all that's tucked between the insole and the midsole is a really thin liner.

At most there's something underneath the shank, but that might just be glue or even leather.
