Boat shoes are...well...they're kind of vanilla. Even though they're more stylized than something like a basic sneaker, the connotations and stuff load it up. That said, there are plenty of specific iterations (Sperry x Band of Outsiders, Quoddy, Yuketen, etc.) that make genuinely interesting and well-crafted boat shoes that don't have the blandness that you find in most generic models.

As for being buff (or not), it's all about proportion. If you're super broad, then don't wear things that make you more broad. If your arms are super big, I wouldn't say avoid slim sleeves, but don't do anything extra to draw attention to it. Just keep things balanced so that your best attributes are highlighted, but not exaggerated.

And I don't know where this cardigan talk is coming from. I'd say David Gandy's a pretty buff dude and...well...
