You're on the right track and you're smart to spend on the dress watch.
Do you "need" 3, though. I think you can actually combine the daily, travel and weekend watch into one.

For example, a quartz Omega SMP 300, Brosnan Bond era (picrel. ref.212.30.41.61.01.001) will cost you around $2000.- more or less. The hour hand is indepdently adjustable, so it's a handy travel watch. (You don't have to stop the watch to change the time zone.) Omega made these in a number of different colors, bracelets and hand styles, so you can pick one you like.

Between a Tank and a Seamaster, you'd be pretty much all set.
