If my chest is 40 inches should I pick a jacket with 38-39 inches chest or one with 40? I want it to looks tight and to not be able to close it so the shoulders and the sleeves fit nice. Also I want to avoid it looking like pic related when opened

How can I avoid having my biker jacket look like this when wearing it unzipped? I hate how there is no space in the middle. Mine is not as exaggerated as pic related but it's still bad. I'd like the jacket to not touch in the middle without me having to hold the sides with my arms and having the rest of the fabric on my back make me look like I have a hunchback on my lower back.
