I need your help.

I want to mod the y3000 so that I can use a longer lasting battery (hopefully 5h). How can I figure out what specifications I need on the new battery? What matters? Current?

what purpose are you going for? stealth camera work comes to mind at first, longer lasting batteries will be of course, larger, but if you're putting this in a garment disguised as a button you'd find it to be quite difficult without running wires through it.

looking at the stats on that camera annoy me though, I have a camera I paid 500 bucks for in 2007 from canon that is quite similar for stills, but it's video recording is 240 not 720

oh christ your options are pretty open then as long as you can get the hook ups and match the voltages.
Can you get the battery out for us and read off any listed numbers?
might be in the manual as well.

by the time we're dont it's battery will be multiple times larger than the camera itself and can run for a day

Not quite. I have one. It's approx 40..50 minutes.
From my notes, at Ubatt=5V:
Off mode: I=0.007mA (2mA scale)
On (standby): IAvg=160.8mA, Max 185 mA (200mA scale)
Recording: I=~190, often jumps over 200mA scale.
0.18...0.21 in 10A scale.

Also I haven't measured this, but it seems to have quite high cut-off, like 3.4..3.5V (so not gonna work well with LiFePO). I'd suggest running it off higher voltage with efficient regulator. Or maybe 4x NiMH's (4..5.6V).
Since it connects to USB it runs off 5V too (haven't gone higher).

So to continue, being pessimistic and assuming consumption increases to say 250mA with lower voltage, you'd need 1250mAh 3.7 pack for 5h runtime. Add something for inefficiencies, hiccups* and crappy batteries and you should look at 1500..2000mAh range.

Mind you 3:00 minute video takes 233mb.
233*((5*60)/3)=23.3 gigabytes. Since it's 32gb max, with 29gb to actually use you better hope file size is constant...

* If you're planning 5h nonstop, you better add heatsink and a watchdog circuit, because being as is, the thing is not very stable and tends to freeze after longer runs drying the battery.
