Start with a few of those eggplants you've got there. Slice them at about a 1/4" thickness and salt them to help remove some of the moisture.

Set up a breading station, a bowl each of flour, egg, and breadcrumbs. Bread each slice and pan fry until golden brown.

Next, use your favorite marinara sauce (store bought is fine, whatever you like most). Lightly sauce the bottom of a heavy casserole dish. Then arrange your fried eggplants and layer with sauce, mozzarella, and parmesan. Repeat layering until you run out of all of those ingredients.

Bake at around 400 degrees for 30 minutes. Run it through the broiler for some color. Remove from the oven. Allow 10 minutes for the dish to cool and cram it up your ass.
