I want to be able to carve and frame the lumber, lay the bricks of the archway, install the piping, install the electric, maybe even at the schematic level, not entirely by myself but at least be capable of lending a hand. Do I really have to be shoehorned into one trade for work for the rest of my life?

Get really good at one or two things, but learn it all. Then go be a GC and recognize what you should sub out and what you shouldn't, and pick up a new skill now and again like pic related.

No, most trades can be learned "good enough" with a few years of experience in each, but if you actually want to make money someday you'll have to pick at least one thing you can focus on
