tl;dr Motor not come apart. What do?
The other one had a bolt at the botton and I could lift the thingies right off. This one had an allen bolt in the center but removing it did nothing. Looks like it has a bent-topped pin thingy going through the off-center thingies. I want to use this to built a machine but I don't know how to expose the shaft.

It looks like you have an eccentric cast into the shaft (need side view pic). It may not be removable, if it is get a puller and pull it off. More pics needed.

Also I'm kind of curious what would happen if I started it up as it currently is. If it's staying together without the bolt I was able to remove maybe some motion would jostle something else loose?

it's a crankshaft, probably from a direct-drive air compressor. it has to be off-center from the motor shaft so that the piston will go up and down.

It is off-center. It's an air compressor motor like >>1632702 said. I took two motors off of air compressors and the other one had a bolt at the bottom that I loosened so I could slide the whole caboodle off but this one didnt have that. There used to be a plastic fan here but it came out with the hex bolt from the top.

For the record, I have another similar motor but I wanted this one to be available as a backup. They're both "5HP" (probably actually 2 - 2.5HP) motors I'm going to attach to a plastic shredder with pulleys. I'm learning as I go and reading ahead as far as I can because I have no training or experience. In this instance I have no indicator what anything is called to reference online.

t. Engineer here, and from the photos you sent, it seems like your best bet is using an acetylene torch to cut the eccentric off the motor, making sure to apply plenty of heat to the coils in the motor and then send the whole unit out to the motor shop to repair the burned coils in the motor, then send it back out to the weld shop to weld an extended shaft back on where you cut it off two steps ago and after the weld melts a few coils, send it back to the motor shop to get the coils re-insulated, then send it out to the machinist to turn down to the working diameter and seat a key in there for you and then you can use it for whatever you damn well please.

just use an angle grinder and zipcut the top of it off in 1/4 or less increments until you find the motor shaft. if you cut a bit off the motor shaft its not the end of the world. then once you see the sides of the shaft itll be easier to cut the whole works off
