The house I bought has an old asbestos shed.

I'm thinking it would be cheaper and easier to clad the outside with PVC/wood shiplap, and board inside with chipboard/MDF.
It's structurally sound, no signs of wood rot. Just a slight leak on the roof apex.

Any advice or similar stories that /DIY/ could provide?

Don't know about bongland, but here in Murrica we have specialized paint for going over asbestos. "Asbestos Encapsulating Paint"

It's not cheap, but it's cheaper than what your plans would entail.

Just give all surfaces a nice thick coat of oil-based paint if you're really concerned. Don't drill into it or cut it up.

In-place asbestos is one of the biggest health panic memes ever devised. All those mandated renovations made contractors with the right licenses very wealthy.

How dangerous is old asbestos roofing? I have a garage similar to OP but bigger and with holes in the roof. Was thinking about removing all the asbestos stuff and rebuilding the roof with wood.

Depends on the asbestos type and its condition.

Long-fiber asbestos isn't very dangerous. Short fiber is. If it's compromised then the fibers can float through the air and get into your delicate little lungs and give you the thing grampa died of.

Performing construction work on it without respiration and some kind of mop suit is a very silly idea. Consider hiring a contractor so he dies and leaves behind orphans before you do.
