If you have arduino or equivalent you could modify the phsyical aspects of the mouse to track the movement of the front and back wheels of a bicycle using the X and Y sensors of the mouse. It wouldn't even require any electrical work besides attaching the output of the mouse to your microcontroller and some minor wire soldering. You could then graph the data on a computer and map all kinds of information with repeated integration.
It would make a good learning project.
