Retard here.

If I want to bolt two things together and there's a gap between them, will the nut and bolt loosen over time even if it's initially tightened?

Will this be fine?

If you want it welded together use 2 lock nuts and red loctite

He means that, if you want to ensure that they can't fall off (but they can still come loose), mangle the threads so the nuts get stuck if they start coming off.

Or you could do it non-ghetto status and use a cotter pin. (Castellated nut optional.)

if your going to use a loctite product make sure it is compatible with the material of the bolt you are using it on. For instance stainless requires a special primer. there are different formulas for different size fasteners as well

No polymeric adhesive is even remotely as strong as steel. A Locktited fastener can break rather than loosening because the geometry involved may concentrate stress is places other than the bonded surfaces, but that's not the same thing as material strength. With the right setup, you can break steel with any adhesive no matter how weak.

Finish torquing it down, spazz. Aforementioned loctite, nut, pin etc can all help hold it all together on top of the pressure of the nut via its threads+bolt.

Spacer of some sort along the bolt the measure of the gap you wish to preserve. Washers, another nut, various materials/sleeve, etc all work just makes it so you can torque down the bolt+nut properly.
