I make biltong in a £30 dehydrator from Amazon. Good high protein snack. I like it still slightly pink in the middle.

>£10 cut of silverside from the supermarket
>cut into even width (about half an inch) slices as big as the dehydrator will allow for
>marinade for a few hours in vinegar, Worcestershire sauce, salt, pepper, coriander seeds, chili (adjust as you want, I made a batch with just barbecue sauce and salt and it was good)
>dehydrator, 50C, 12 hours, reverse the order of the shelves because my dehydrator doesn’t dehydrate evenly, another 8-12 hours, then slice as thin as you want

Worked at a family owned Mex place for a while, and the recipes I learned are honestly worth a hella lot more than what I was making there as a college gig.

Their OG salsa uses jalapenos that are cooked by cooking on a hot pan until the skin burns, then removing the blackened skin and grinding the smoky inner flesh with diced tomatoes, garlic, onions, and salt and pepper.

You can adjust the level of spiciness by changing what peppers to add.
Bell: Not Spicy
Jalapeno: Moderately Spicy
Habanero: Very Spicy
and up ya go. add a squeeze of lime and top with freshly chopped cilantro or lemongrass.

For the peppers, I wrap in foil then bake or leave on a pan that lets its own moisture turn into steam and cook it with minimal skin burning. After about five to eight minutes, the peppers are barely holding shape, and can easily be pounded to a puree.

You don't even need peppers, just use cumin as a seasoning in it. Tomatoes, onion, (cillantro if you like it), lime/lemon juice, and whatever spice level of pepper you want. Oh and don't be a bitch with the salt. Salt it till it tastes good.

Its easy.

Simple green salsa:
Boil some green tomatillos(2pounds)
And some some jalapanos.
Trow in blender with some minced garlic, minced onion 1/2(optional), cilantro 1/2, and salt to taste.

Boil them till they start feeling soft, if left too long they will turn to smush.

Just start from here. Ingredients are cheap, just experiment

You can also grill the tomatollis and peppers. Boil/grill an onion if to spicy.
