Beginner wood carver here, my question is if I leave a piece of wood to soak in water overnight, will it become a bit softer to work on afterwards, while it's still wet?

It will be softer but most traditional woodworking tools will have a hard time with your piece. Sanding? Forget it. Planing? Your joy will turn to ash in your mouth. Carving? Enjoy your aching wrists, rusted tools and pitted cuts.

Don't soak it; you'll end up peeling off grain. Buy some balsa or basswood, that shit carves like butter.

Start with carving bars of soap, this is for your own safety.

look into a janka scale and learn how to keep your tools/knives sharp. for hand carving pieces you want to stay around 0-1000 on the scale

No? if you soak wood it expands, when it dries it will contract and if you've carved it into delicate shapes it will crack. This is with any kind of woodworking. If you make a chair with even slightly damp or raw wood it will warp and crack later.
