Another question, does it need to be wireless? You could easily cover 10 acres if you did a wired network something akin to pic related. And if you got cameras and network devices that support power over Ethernet you wouldn't even need separate power cables, just the Ethernet cables. A Cat6 Ethernet cable has a maximum range of about 100 meters for reliable data transmission, although I do recommend checking the specifications of whatever equipment you end up using as they can vary quite a bit especially if you decide to implement power over Ethernet.

Consumer-level "wifi cameras" are shit. Go with a decent PoE camera, run it through a little PoE-passthrough switch/router, and backhaul through a radio to the central point.

This is doable, but you'll need actual purpose-built hardware somewhat, not 'old routers'.
First, we need to recognize this is a ~$5000 - $10,000 endeavor, not a $250 endeavor.
Now that we've established we indeed need this sort of thing, and are willing to (and can) pay for it:

You'll need some devices built to function in a 'mesh' network. I like the Ubiquiti UniFi hardware that's designed for this, it works well and these models you can use your own antennas if need be for more directional stuff:
($80 per AP.) (They will cover about 200 feet linearly, so if your property was a square of about 10 acres, you're talking ~670 feet x ~670 feet, so you'll need about 12 of them probably.)

These use about 2 Watts consistently, so you can power each with a small battery, basic controller, DC-DC power converter, and 25 Watt solar panel provided it gets good sun exposure. Be sure your battery is enough though to last for at LEAST 3 days without any sun, because weather happens.
We'll estimate and say this is $100 per AP. And you'll need one for EVERY AP.

Then you'll need your NVR, your router, etc. Other stuff, mounting crap, whatever. And of course the cameras.

So let's say each AP and power rig is about $300.00
Let's say each camera and accompanying power rig is $300 as well. (I don't know what cameras you're using but... I'll just assume the camera is ~$80.00 and the power consumption is the same as a single AP. This is fairly accurate from my tests myself. :) )

So let's assume you have 12 AP's and 12 cameras. Assuming you do all the work yourself, you can definitely do this for under $10,000! :)

OpenMesh makes decently inexpensive meshing wifi APs that will suit your needs.

Keep in mind bandwidth will halve every time you mesh, so you may want to consider running CAT or, depending on the length, fiber to a media converter to some of the nodes.

You could setup a solar panel with a 24v array and get a couple of Mikrotik Powerbox's and ubiquti APs. I work for a WISP and that is how some of the buildings are connected in our network

Powerbox's will take 8-28 volts, radios are good from 12-26

Get a blueprint of the area, note the terrain. (High ceiling, thick walls,...)
Get an appropriate amount of AP's, these can be POE if you adjust your switching devices accordingly.
Get your cameras, can also be POE.
Get fast POE switches, I'm thinking at least some HP airwave grade stuff.
Connect all the stuff as needed, set up the software and that's it.
Minimal management, replacement is easy.

Word of advice, don't get into chinkshit when doing this for anyone but yourself. It will not be worth the time you need to invest to figure out how bonkers the GUI is or why the AP's don't have a proper way to push configuration over CLI or something like that.
Set up some POC's for your client, I usually do 3 with varying budgets.

Cheap way is use one wifi cam on a hydrogen filled weather balloon tethered by 12v power cable to car battery and solar panels. Hoist it until you can see all the area. Bonus points for infrared illumination
