I work in a resturant and occasionally do handywork. Im trying to replace the blade on this can opener but im having trouble getting this screw out. I know for a fact that its stripped, but i also think its "gunked" on there with grease or something. I tried wd40 and several other things but i cant get it loose. Any suggestions?

You could try vise grips, twist and pull at the same time. And that gunk is food, and e. coli, and listeria, and salmonella; and that's why a good health inspector starts with the can opener when they show up for an inspection. They never get cleaned.

Heat the outside up with a torch then try to turn the screw out. Heat is your friend.

I cant get anything underneath the screw to pry it. I also cant get a good hold on it with the vice grip. Its worth noting that i have replacement screws, so if theres a solution that involves destroying the screw i would be open to it. Thanks for the help so far.

Can you twist what looks like a plate under the screw you're trying to take out, and pull up in that as you twist your driver counterclockwise?

Literally dealt with this in the kitchen i work with last week. Its good that you were able to get one screw off. If you can knock the small plate between the blade and the screw it will help. Using the blade without one of the screws help loosen it up as well. Our crew at work put the fucking thing through the dishwasher to clean it every night. Its the reason why it got rusted shut. Be sure to tell your crew not to run it through the dishwasher as is. They need to disassemble it before running the aluminum part through. Sanitize the blade and cog and be sure to dry thoroughly before putting it back together. Our can opener cog rusted shut so bad that we had to buy a new one. Inspect the cog teeth and blade from time to time. Kitchens are notorious for not up keeping equipment properly

If you can get the back of the blade of a butter knife in there, holding it tightly in the screw's slot with the thumb and index of one hand, and push at the end of the handle with the other, you should have enough leverage to turn it a 1/16 of a turn, and then it will be loose.

Seven minutes in. There is a better design of flathead screwdriver that doesn't cam out.
Basically the tip is a bit wider right towards the end instead of narrowing all the way.
