Yea you're definitely gonna need to sand them a lot. If you get cleaner/newer pallets, you won't have to do nearly as much and you have the option to leave the stamps on there like I did for the coffee table.

I ended up putting a clear coat on the top of the coffee table and TV stand. Really brought out the dark shades of the wood.
