Basically, you learn very well how RPMs transplant into volts and workload (pedaling harder not faster) translates into amps. More volts = faster RPM and more amps = harder to pedal.

If you try to light up a toaster, all that resistance becomes physical resistance and it is rather hard to pedal. Short out the wires for the generator and it nearly stops you and becomes extremely hard to pedal, not that you'd want to do that to it. If you try to power a small incandescent light bulb from a microwave oven that runs at 110v will make you work up a sweat by pedaling much faster and give you a bit of a workout in workload too. You basically can't do that with this setup.

This setup can make like 75volts, but when there's a charge controller on it getting 14.4volts and 2 amps is the best the rig can support with a peak of 17volts and 2.5amps. That's moderate pedaling speed with rather hard workload. Trying to get more amps past that and the chain slips. You'd do good to keep it at 30watts for recharging batteries. Do that for an hour, you'll be wore the hell out, and the generator will be pretty hot.

The most notable thing I run with it is a micro wood lathe (prototyping pics and results). I needed one to make some wooden fishing lures and used stuff on hand. I use a Dremel to shape the wood and the top of the workpiece spins away from me so it doesn't catch the Dremel bit. The Dremel is wall powered but the lathe and vent fan are pedal powered.

Anything that requires a specific voltage range needs to be regulated or it can burn up if I pedal too fast.
