Aside from a bit of polishing, my big skinning knife is pretty much done. Which is good because its fought me every step of the damn way and kinda sick of working on it.
Handle is Gabon Ebony, Tiger Myrtle and Eucalypt burl, mixed in with some F4 and brass inlay, bolsters, the fittings are 304SS. Blade is 5x layers of 1095 and 5 layers of 15N20, tempered to about 59-60R, so its a fairly 'hard' bit of metal.

I did the front guard extensions to help with the slicing, mostly the pinch-grip on the spine which I use a lot when preparing game and skinning, plus added a sub-hilt around the forefinger which will reduce the chance greatly of hand slipping when the knife is all covered in blood and shit. As much as it was a pain in the arse to make, actually very happy with how it feels in the hand.
