Experience helps a lot. Since you appear to be lacking that, use your judgement and select something that seems a bit more than you need. Read about the item you want to use and the material it will go into.

If you fail too many times maybe /diy/ is not for you, but some failure with this sort of product is not unexpected, especially in sheetrock. Not pictured, but one of the most failsafe anchors in sheetrock is pic related, but not for overhead - a screw or bolt into a ceiling joist would be the ideal way to support a heavy item above you.
