You get easy access to a CPU without implementing one in logic or having to go through the pain of using PCIe. They expose a set of AXI interfaces so the FPGA can access the system's memory and the CPU can access the cores implemented in the FPGA using memory-mapped IO. You can run Linux on it, Xilinx provides drivers in their fork of the kernel, in fact, a lot of them have already been merged into mainline Linux.
