That $4.00us is for hanging weight price. Packaged weight is much more. About $7-$8 for 100 pound bulk purchase.

Right now grass fed rib-eye steaks are $17 per pound.

1. Live weight or on the hoof is a living animal. This weight fluctuates depending on how much the animal consumes and how much they expel. Sale barns use this weight when selling cattle.

2. Hanging weight. After the animal has been butchered. The hooves, hide and other non-edibles have been removed and the carcass is cut in half or two sides. The hanging weight is per side of beef after aging. Usually 2 weeks.

3. Package weight. This weight also varies depending upon the cuts of meat the customer wants. A standing rib roast has bones and will weigh more, but a prime rib roast has the bones removed and will weigh less, but cost more because of the labor to remove the bones.

When I sell beef cows to a customer, I use the hanging weight because it is the most consistent. And most buy a side of beef.

If a sell cows at market, I Always have water available to animals before selling them because a US gallon of water weights 8 pounds. I have seen cows drink 10 gallon at time. Never let your cows become dehydrated before selling them.
80 pound fluctuations in weight x $1.11 per pound x 10 cows makes a difference.
