You can use any pushbutton switch you want (projecting style will be easiest), you just need to mount it to a plate that you can attach the eject handles to.
Then add a hard stop to the plate so that a really strong pull won't result on the switch getting crushed.

You can also add die springs to the bolts that hold and guide the switch plate (5 to 19 pounds of compression each) to increase the amount of force required to pull the switch.
