You are going to need multiple HTs for what you want. If you was going to just listen, get a Yaesu FT2D, FT3D, or FT5D since these can listen on HF (exceot SSB). For talking on CB/10m ham band, you'll need at minimum a mobile rig since AFAIK there hasn't been a commerical 10m HT produced in a long time. Almost all HTs can transmit on the 2m and 70cm ham bands.

However, if you want ultra portable that can pretty much do-it-all, look into the Icom 705. It's not an HT like a Baofeng, but it's a QRP (low-power) radio that can transmit on all amateur bands, and it can be MARS modded to talk on other services like GMRS and CB. Pic related.
