2 main ways that I know of
>hot thing inside box with other things that you want to get hot
>hot thing really close to box containing thing that you want to get hot.
If you are using wood to fire it, you probably want to keep that separate from your food, so one old method was to burn a big fire in a thick walled brick enclosure similar to your pic, then scoop out all the ashes and embers while it's still hot, then put your thing inside to cook. oven will slowly cool down but is usually hot enough to bake your bread or whatever.

Personally I'd do a combo of the two, where you can slide a >5mm thick steel plate in above the fire to seal the fire off below, creating a chamber which will act as your oven.
All of the above can be built from bricks, clay, mud. You may have issues with cracking due to thermal expansion/contraction/drying.
