This is how an airsoft gun works, you might find it helpful.
You will not have problems with motor power since you will have to use gears to load the string.

How feasible would it be to build an AEG? they dont look very complicated

I have never really DIY'd before so this would all be new to me

I think it would be easy enough just use some metal tubing, rubber O rings, gears, and a high torque electric motor to build the internals, and put it all in a body made out of sheet ABS
