OP here.

Had some ok success with the soda bread bones. It was a pretty standard recipe that I modified slightly and will probably modify a little more.

4 cups flour
2 cups water
.75 tsp baking soda
.75 tsp baking powder
1 tbls kosher salt

Next time I'll probably brush it down with water to smooth out the outer surface a little.
