A couple years ago, my fiancée’s birthday gift to me was a weekend road-trip to a private-onsen ryokan in Wakayama.
As an additional surprise, she had looked up a place apparently famous for its Wakayama-style ramen, and was going to stop there on our way to the onsen.

So we’re driving through a fairly small mostly-rural town, and she suddenly stops the car and turns around, going in the opposite direction.
A couple minutes later, she does it again, heading back in the original direction. When I asked what’s wrong she said “there’s supposed to be a ramen shop right here!”
But the only thing there was a kinda shit-looking garage.

Turns out it *was* the ramen shop.
It’s a local garage where a father & son fix cars/bikes, and are apparently known for performance-tuning motorcycles.
They also happen to make ramen for a couple hours daily at lunch and dinner, using a corner of the garage with a kitchen & seating. The mom does the serving.

I really loved how the tabletops were sheets of clear plexiglass-like stuff, underneath which were old nostalgic photos taken by the husband not long after he opened the garage as a much younger man.

Only proper ramen I had was from a place called Meshikou in Columbus.
I liked it. But I only went for the first time not long before covid really took over so I haven't gone since.

Some place in Los Angeles. It is run by 2nd generation Japanese kids. They have anime posters all over and the place is blaring music, everyone is drunk including the staff. I wish I knew the spot I had been there two times and just forgot to remember. They scream at you in Japanese when you walk in.

Noodles are fresh and the broth is amazing. Huge menu of options to add from curries to oils and different kinds of eggs.

The best ramen I've had is from an unpretentious chain in Japan, Ramen Bankara. The broth is unreasonably dark and dense, and the semitransparent surface is rendered fatback. Served with raw garlic and a garlic press. It has a handful of shit reviews for being "greasy", but I like it.

their curry is just watered soup

There are some pretty good ramen places outside of Japan as well, namely Korea, Taiwan and Hong Kong. Here's a bowl of ramen I had while I was in Hong Kong. It was like a Seafood?(魚介) broth Tsukemen, the Karaage was really good there as well.

I don't remember where my best ramen is from. For the most part they've all (restaurant/kiosk served ramen) been satisfactory, and my only negative experience has been with "tonkotsu ramen". The flavours in tonkotsu clash imo, and make me feel nauseus. Most profesionally served ramen is good, but tonkotsu is not for me.

It was far beyond “good”.
Not only did I get to have amazing ramen, but I got to listen to the family story of how the father started the garage because as a HS student he knew he wasn’t university-material, but he could tune an engine “totally asleep and hungover” (his wife’s words).

If she and I had known I couldn’t enter the country for so long, we would have gotten married last time I was there. We’re currently working to solve that.
