Is there any way to make homemade ramen every day without going broke? I don't have time to make pork bone broth, so I ordered some instant packets off Amazon. My supermarket doesn't carry stuff like udon or dashi or miso, so I am ordering stuff online and it's about $100 per bowl of soup. Is there a cheaper, no msg/good flavor way? In b4 top ramen, it causes cancer apparently and doesn't taste that great.

you can make a simple broth like chicken, doesn't have to exactly be the usual dashi stock. Look up some recipes for tare, it's the flavoring they pour into a bowl before pouring hot broth, make a large batch of that and keep it in the fridge. The basic ingredients should be available at your local supermarket, Asian ones especially, if there are any. Making fresh noodles can be a chore, there should be fresh ones you buy at a grocery store but if you want to make some, you should make a large batch to keep in the fridge. The recipe should be straightforward and isn't as complicated as Chinese handpulled noodles. There's also special noodle machines where you feed in the dough, crank the handle and it comes out as thin strands, a cheap one was around $100 bucks (CANADIAN) when I checked one time, if you're really looking to go further with this idea of having homemade ramen easily available.
I don't think eating it everyday is healthy though, not even Asians eat noodle soups daily, they diversify their diet. All of this will be very time consuming and if you're not willing to put in the time and money, then you shouldn't have ramen daily.

What do Japanese people buy to make ramen at home? I know they're not all boiling pork bones for 12 hours every few days... I guess I just want a simple quick ramen recipe that isn't top ramen.

Your average japanese man works 23 hours at the job factory, walks home, stops at 7/11 to get a fried pork and rice bento, sleeps for 15 minutes, then goes back to work. Repeat for 30 years while chain smoking and then hang yourself

If you have a pressure cooker, you can make pork bone broth in a fraction of the time that tastes identical to the stuff that takes forever and stinks up your kitchen. I went through a 'ramen phase' where I would boil the broth made in my Instant Pot (usually plain pork + salt) with a number of other things (dashi powder, garlic, scallions, chili flakes etc) to make ultra savory broth. I could share some of my observations with you but they might not be that useful. But I really don't think you need to be spending that much

I'm making it for my autistic son who will only eat fried rice and chicken soup and french fries. The other day I fed him a pf changs ramen and he loved it. I've made char siu before at home. I was just looking for a cheap recipe my son can eat for lunch. I will probably try making tare. Does anyone know a good, relatively inexpensive brand of udon noodle?

You can get noodles that are in a bag of water that are easier to just heat up.

I’m no ramen expert but I guess I would say to just make a big batch of the broth.

I've googled "ramen noodles" extensively now and can't find a definition or a picture. I'm looking for flat noodles of the kind found in pho, but don't know what they are called...

If you want something quick and easy that offers decent quality, these packs from Hakubaku are pretty good. They are a bit more expensive at around $5 for a 2 pack but the quality far exceeds the typical cheap ramen bricks. Noodles are not fried, and not entirely dried either, not sure how they are shelf stable but they are. They get made and imported by the Japanese branch of their company and assembled in the bags with the soup base packets (liquid soup concentrate not the powder stuff)

If going the homemade route, you could invest in a pressure cooker to slash the time it takes to make decent stocks. Or you could chase down a bottle of that 'Tsuyu No Moto' soup stock concentrate. It is apparently pretty common item that gets used for things like udon noodle soup, as a base for sauces, etc. Can probably find it at any asian supermarket or online along with dried noodles.

>my autistic son who will only eat

Its called raising your kid, if you don't teach him to eat normally then how do you expect him to take care when he gets older. The autistic screeching is the least of your problems when he's older with autism rage strength.
