A few months ago I went to a fancy-ish ramen place and mine had a piece of chicken in it, however it was not like any other chicken I have ever tasted. It was very very white and VERY tender and soft, almost extremely so. I forgot to ask how they cooked it, but I've never tried boiled chicken that feels like that, perhaps it was steamed? is anyone familiar with a chicken of this texture? Pic unrelated, it did NOT look or feel like that when i bit into it, that's too dry, it was very very moist.

It's probably some sous-vide chicken from a giant plastic bag.

Use honey instead of sugar for more moistness.
