I like home made pasta but I can never get the al dente bite of store bought dehydrated pasta when I make it. It’s nice as spaghetti, linguini, or maltagliati but I don’t really want much of a bite there. I do the standard 1egg/100g flour ratio method. My machine is an atlas 150 passed down from my great grandmother.

I do aswell for lasagna pages and ramen noodles. Flattening is less of a problem, cutting thin noodles is hella hard

Fresh pasta isn’t going to make the water boil faster.
Plus I use a portable cartridge-burner. The gas cartridges don’t come from Jews. They come from Changs.
Homemade pasta is based though, and I make it when I feel like spending the effort. Otherwise I just buy fresh.
