Honestly depends on the day. If I'm not feeling my best, I'll avoid tonkotsu since it's too heavy and will gravitate toward shio or shoyu. If I'm feeling good, I'll go toward tonkotsu or miso.

It's the Nagoya "Taiwan version" of ramen stock (which is really from Japan, and not Taiwan). This stock is spicier and has a lot of ground pork in the stock.
