The sand is in a pan on top of a burner, the pots are filled with hot water and finely ground coffee, you push the pot into the hotter part of the sand until it starts to boil over (repeat this a few times when you're first making it to brew the coffee), then just repeat that step but pour it into a cup when it starts boiling over. After he's filled that guys cup he'll add more coffee and water to that pot and use one of the other ones on the side which have been brewing longer.
