There are several fundamentals prevalent in Japanese cuisine (probably prevalent due to its popularity and not specific ownership of these fundamentals) that are very useful to learn. But it is really REALLY not that different from the other various cuisines of Asia.

I lived in Japan for 8 months (gomen-nasai) and I never saw this natto+egg shit. The most disturbing thing was some fresh-boiled little octopi served whole that burst in your mouth when you bit into them. Everything else I ever had except liver was pretty god damn good. This was at public schools, restaurants, homes, and stuff I cooked from grocery store ingredients.
