I'm supposed to be making dessert for 8 people at a party this week, but I have no inspiration. I have one day to make it, so stuff that's supposed to sit in the fridge for more than 8 hours is out. It has to be tasty and good-looking. Nothing super fancy though, I'm a shit chef.
Bonus points for a nice soup recipe

I think pic related is very pretty, you can try different flavour combinations. You can keep this in the fridge for up to two days before they get mushy. This one is Lychee Panna Cotta with Pomegranate Jelly.

I don't think you should go with something as heavy as apple pie or banana bread. If you want cake, then do a light one.

do mini cheesecakes like in your pic, if you have cylindrical molds

layer graham/vanilla crust on the bottom, pour in about half your cream cheese filling, mix in fruit/topping of your choice, fill in the rest, stir slightly, and bake until it barely jiggle in the center and can be pressed with the finger at 325F (probably about 20-30 minutes depending on your oven, just watch them)

to make a fruit sauce just put 340g sugar and 25-50 grams of sugar, with juice of half or whole lemon, put heat to medium or flame to medium low and stir constantly until it breaks down, push the mixture through a sieve and discard or resuse the seeds (don't serve the seeds on their own, not fun to eat and tears up many peoples intestines)

Make dishes that can be easily made into large portions at a time.

Try making a big ass salad for a starter, make a simple but delicious soup or stew (Id suggest butternut squash soup or a chilli maybe), a main dish say coq au vin, and a dessert that can be easily made and handed out, maybe cupcakes or a fudge.

desserts can be simple and still amazing. I went to a super high end greek restaurant and this was the dessert:

full fat greek yogurt in a ramekin , a thin layer of honey over it, a few pistachios on top. was better than you would expect.
