Hiss can be good or bad.
Hiss of air going IN: good, means the package has stayed properly sealed.
Hiss of air coming OUT: bad, means there's pressurization = fermentation = spoilage.
No hiss is neutral, neither good nor bad.

If I were your parent, my answer to your wish would be to haul your ass to the nearest army recruiting station. You'll get more MRE's than you could have ever imagined.

Wouldn't that also depend on the air pressure when it was packed vs when it was opened?

It could, but air coming out should be considered a bad sign as previously explained.
