i do this, always make broth from the bones afterwards and use all the leftover chicken for chicken soup. usually thai themed with rice noodles.

sometimes you have to roast the bones, but they have so much flavor. kinda can't believe how many people buy meat without the bones, except for specific recipes that just really don't need bones or call for deconstructing a cut of meat a lot.

sorry for the late as shit reply, had to prep a dinner thing.

anyway the way i make stock is just roasted bones, onion, celery, and water. usually i add lime leaves, and one star anise, and all the pan drippings too, obviously, since a bunch of flavor is there. cook that at least 3 hours on a low boil heat. if you want extra broth, add a general chicken stock thing from the store. the next day, thai chilies and fish sauce help add more flavor to the soup.

when it's done i throw it in the refrigerator and scoop out most (but not all) of the fat, then set it aside in case i think the broth can do with more. end result should be a nice amber soup, not cloudy.

you can add a lot fo chicken broth to change it tho, more traditional route is obvious with carrots and maybe some black peppercorns, salt when making the soup itself. maybe some paprika and cayenne.

Stock is the easiest fucking thing to make and the flavor and texture are incomparable to anything sold in a store. And thats from " free" inedible junk from a bird that costs less than 2 pre-cut chicken breasts.

I remove the legs and breasts from the bird, then dice up the rest and shove it into a pot. The most annoying part is having to cook the drumsticks so you can get to the bones so you can start making the stock.

I've started just adding the thigh meat whole to the stockpot since i never get around to eating it. I'll usually take it out after and eat it even though it's dry as fucking possible, the flavour is pretty good from having simmered in chicken stock.

Funny story, one time I made a roast chicken with a delicious lemon-herb butter all over it and under the skin and shit, then made broth out of the drippings and bones.
