R8 my salad:

>Babby spinach
>Babby kale
>Shredded beet leaves
>Shredded broccoli, raw
>Onion
>Shaved carrot
>Roasted almond slices
>Roasted sunflower seeds
>Dried cranberries

Topped with a whole beet, boiled & sliced. Oil & balsamic dressing.

Yes to both. The onion adds a crunch as well.

I only used a small splash of oil and vinegar. It's quite flavorful on its own, just needed a bit of moisture because almost all the ingredients were raw.

The beet slices are super dense. Basically a substitute for chicken or egg in terms of real substance.

Mainly because personal preference, I like spring mix or other baby greens over spinach/kale.
Everything else looks great though. I love beets in salad and in general, totally underrated.

Beets are so delicious. Highly recommend pairing beets and goat cheese. They complement each other well.
