I use pork shoulder which has a nice fat to lean ratio for sausages. Smoked kielbasa typically derives it's flavor from garlic and marjoram. When I have venison I'll use 70% venison and 30% pork fat. I use this recipe but double the garlic and leave it in a coil and just cut off hunks. As an amerilard living in bumfuck nowhere I have to make my own sausages if I want something edible.
