Artichoke. I don't dislike artichoke when it's pickled and in an antipasto or something like that, but it isn't a vegetable I think I'd ever go out of my way to have. Only half of the vegetable is actually edible to begin with. You can actually eat a whole cucumber.
One of my favorite snacks is just sliced cucumber with white vinegar, alt, sugar, and spices thrown in the fridge overnight. Not quite pickled by the next day, but tasty nonetheless.

Cucumber goes well with pork, I found out by accident and went through a binge of eating my own pork & cucumber wraps everyday. Only thing is how poorly it keeps. You have to throw it away after 48 hours before it starts going multi colored. I'd eat it much more often otherwise.
