Goose meat tends to be a little gamey, but when it's cooked well it has a nice beefy flavor. Duck can also be gamey but it tastes more like chicken.

imo duck is better, especially when the skin is nice and crispy

I've only eaten quackers, and only really worked with quackers. Honks and hissers are a real pain to deal with, from what little experience I have.
If/when I get some land I'll definitely raise ducks for pest control, eggs, and meat. They are pretty easy to work with and they don't have sharp beaks that damage plants like chickens do.

I used to do some volunteer work with a small farm. They typically had a few dozen ducks at any given time, which were given pretty much free range.
They can be noisy, but compared to chickens, or especially larger fowl like geese, it's nothing really noteworthy. My dealing with geese and swans is limited to feral animals, which are aggressive and deceptively strong. They also leave these little logs of shit everywhere, while ducks poop more like smaller birds. Duck poop is gross, but it washes away pretty easily, goose shits will sit on a field for a while, even with rain, before really going away.
