Any basic French dish. Beef bourguignon is just a beef stew, but serve it with a nice crusty French bread toasted in your oven. Likewise coq au vin is just chicken braised in wine, tastes awesome, and sounds fancy.

Second of all, garnish baby, garnish. That 98 cents you spend for a bunch of fresh parsley makes all the difference in presentation.

In all honesty just find a recipe for a food you like and follow it to a T and you should be good for most things. If you're not confident in your cooking, just don't get too complex and stay away from baking. Just some suggestions: curry, dal, cream of X soups, carbonara. Risotto is really versatile dish and what I would go with. I love it, just be sure to stay on top of it and keep stirring.
