Crockpot Mexican Lasagna Stack-Up!

The night I rocked this out, we had no dinner plans, and not much in the fridge. Major hangry moment! Total bummer sauce am i rite?! Darryl, or Big D-Daddybumps as i like to call him, is always in the mood for Mexican food, so I went hunting in the pantry for a bunch of goodies to throw in the crockpot to make a killer meal. This stack up recipe was easy, full of yummylicious veggies and tasted GRRRRRREAT! You can also easily customize this crockpot stackup.

We used the vegetarian chicken in the stackup, but you could used real shredded chicken, beef, or just extra beans and yummy-in-my-tummy veggies. I am excited to try out our veggie sausage crumble next time, gonna be one hunna percent prime!!! CHOMP!!!!

The leftovers heat up great too! Big D-Daddybumps and I both agreed that topping your serving with sour cream is a must! Darryl isn’t a big fan of sour cream, so I just put a little on the side of his plate. He quickly added more, saying “that really makes the dish!” If you are really hate sour cream, I think topping it with avocado would also be amazing. Next time I 'may even add a bit of SALSA if I'm feelin SPICY!!!!!

I want all of you anons to rock out this killer stackup. HMU for dat recipe and Big D-Daddybumps might just be coming over for din-din! Don't wanna see him HANGRY!

Here's your one-way ticket to Flavortown kiddo.

12-14 tortillas (I used small corn tortillas)

3 cups of shredded Mexican blend cheese

1 tbsp of fajitee seasoning

28oz can of tomatas, drained

15.5 oz can of black beans, drained

15.5 oz can corn (or frozen), drained

2-4 cups of salsa

2 cups of cooked, veggie chicken (or reggae chicken)

1 small un-yum, choppsies
