hey /ck/
i really like no bake cheesecakes, but it seems like youre supposed to put gelatin in them to make them set?
i really don't like the jelly-like texture you get when using gelatin though, do you have any suggestions or alternatives? if need be i'll just put up with super sloppy/messy cakes because it tastes better without gelatin

here's a crazy idea - assmemble a normal cheesecake (this step is just like a no-bake) then instead of putting it in the fridge to set for 12 hours, put it IN THE FUCKING OVEN FOR 30 FUCKING MINUTES

You could use less gelstine to adjust the tecture to the stiffnes you prefer, and if you dislike the taste, try alternatives like agar agar? Although i prefer gelatine over agar agar. It seems to give the filling a slightly floury texture. I always go with less gelatine than the recipe calls for and i dig the results.

its more the texture gelatine gives it that bothers me, its like eating cheesecake flavoured jelly
