I think thai food in general is overrated. I'm not saying it's bad by any means and I actually make it regularly, but it seems like the people who make a huge deal about it are all middle-class white hipsters who want to seem more cultured than somebody ordering chinese or something.

He was being pretty reasonable. After Chinese and Japanese became established, there was a period where Thai was the hot new Asian cuisine that you could talk about to seem trendy. Then later on Pho swooped in, but even now Thai is seen as more obscure (and thus cooler) than entry-level ethnic food like Chinese.

The irony is that all the best Thai dishes are adapted from Chinese cuisine anyway.

I think so, there are a lot better thai dishes. I've pretty much perfected tom yum gung, but I've been working on the curries from scratch. This was my first attempt at a red curry chicken and mushroom that I'm going to attempt to improve as soon as I finish my leftover venison chili.

Pad Thai is probably objectively better and more complex dish than say, a chicken curry, but I just can't resist a good curry.

I've gotten ok at making it myself, but I can't get it nearly as good as my favourite thai place. Part of that is probably that I don't have a proper wok setup (and am doing it on an electric stove..).

Easy mode:
Buy some pre-maded curry paste, some "thai chilis" (birdseye chilies), a can of coconut milk, jar of fish sauce, box of chicken stock, can of bamboo shoots, some chicken thigh, lemon grass, and lime leaves. You can skip the last two if you can't find `em.

Slice up the chicken thighs really thin and fry `em a bit, remove, add a little coconut to the pan and fry the paste a bit, then add a decent amount of milk, about 1/3 of the amount of chicken broth, bring to boil then simmer for like 10 mins or so. Add the meat and everything else and simmer for another 10 minutes or so.

.. honestly that's an oversimplification, but that's really the gist of it. Google for a real recipe but they're all along the same lines... it's a fairly simple dish. If you're feeling ambition you can make your own paste (mortal and pestle if you want to be traditional, spice grinder if you don't have the time for that bs), but honestly you can buy some pretty good pre-made pastes and making your own doesn't make that much of a difference in my opinion.

And I agree you definitely need the lime leaves and lemon grass for it to even approach proper, but if it's your first time attempting the dish I think the results are ok enough without them. Of all the ingredients listed, lemon grass and kaffir leaves are the only things you may not be able to easily find at a grocery store.

(also forgot to mention adding a good tbsp or 2 of the fish sauce.. which I'd also argue is kind of a mandatory ingredient).
