I have half a baked potato from last night. Should I throw it into a pan and fry it up? Would it be better than just reheating it? Was thinking about throwing some onion in with it.

Just don't wanna waste food.

You can cut it up and make fried potatoes, or you could scoop it out and mash the insides with other fillings, re-stuff, and bake for a twice baked potato.

Yeah this. It's a go to for my leftover potatoes the next day. I actually think it tastes better than frying raw spuds.

Better than hearing it in the microwave? Of course.

Potatoes are best cooked twice. A baked potatoe can therefore be turned into a tasty dish by cooking it any other way, or even loading it with toppings and baking it again (this is the most boring way).

I would dice the potatoe finely, fry in butter, add onion (maybe celery and carrot) and a meat of your choice. Easy brunch in 5 minutes.

You could take it further still: you can scramble eggs into the potatoes after you fry them too. Basically the options are endless.

Here's why a twice cooked potatoe is superior though: the first cook softens the inside, and the second will crisp the outside. Since we don't want a hard center but we love crisp potatoe skin, it's the superior way to go.
