How do people get fussy? Is it just down to their upbringing?

I was ruthlessly taught to eat pretty much anything prepared for me as a child. There are only a few things I won't eat nowadays, all after trying them at least once.

Tripe
Liver
Kidney
Mushrooms

There are of course things I've never tried so I can't pass judgement.

I had a housemate and it was torture trying to find something he would eat when it was my time to cook. I had to rely on staples such as chilli, or chicken in a tomato-based sauce.

I dreaded when he wanted to cook something as he had so few dishes he liked it got boring very fast.

Pretty much that. People with baby boomer parents who can't cook found solace in fast food and inoffensive quick meals, like craft mac and cheese because at least it was better than the monstrosities that generation was accustomed to.

I wish it could be the case but the truth is rather that some people like to eat the same things they ate as a kid or they relate the taste/smell of some ingredients to bad experiences in their past so they want nothing with them.

For instance I have this one colleague that doesn't want anything to do with onions because it reminds her of the smell of sweat during long trips in brazilian buses. No allergy there.
