Why do most people view cooking as a hassle?

The problem with cooking is that even if you follow online recipes, your dish could come out wrong and weird tasting due to a number of factors (bad recipe with fawning reviews, subbing crucial ingredients, not knowing certain key techniques that may make a big difference, using the wrong equipment, etc.) Some people aim too big when they are starting to cook and fuck it up. Trial and error can get expensive and frustrating when you are hungry too.

Plus stocking ingredients can be wasteful if you don't use them up, especially fresh ones, and cleaning up sucks.

The thing is, over time you learn better techniques and practices, but many give up after a few failed dishes because they think they suck or it just seems way too much hassle over getting to-go or frozen food.

Unfortunately, that's now how it works. Cooking isn't baking. Baking is a science, so having the correct amount of ingredients is all you need.

Everyone's taste buds are different. A lot of ingredients are different too. The freshness, whether something is organic or not changes the taste. The heat of your cook surface may effect the caramelization.

I made Bolognese sauce the other weekend. It wasn't great tasting. Maybe it was bad. But then I realized that I hadn't even really had real bolognese before, so I wasn't sure what it was supposed to taste like in the first place.

Once you realize you can make things that taste good on your own, you'll like cooking a lot more.

I find it pleasurable too, but only if I have the space and possibility to cook and prepare freely. Sadly, my kitchen is small and lacking. Most people who don't like cooking probably have a similar kitchen. Whenever I need something, I need to make room for it and/or dig it out of a cabinet. No matter how shit it is. here is one that I have tried out numerous times myself, it cant be fucked up, its cheap, healthy and nutritious, it ann be made in large batches and ca be frozen for later too. Because it's time consuming and ideally you should do it 3 fucking times a day. That's a lot of time taken out of other things I want to do more.
That aside cooking requires to shop for fresh ingredients more often than I care to go for groceries.
Also lots of people live alone and don't enjoy cooking for themselves alone, and you can't exactly invite people to dinner every day.

All in all I enjoy cooking and good food, just not enough to do it regularly.

Another common complaint is time, which is probably the most valid complaint. I think you underestimate just how little time regular people have every day to do these kinds of things. There's no fucking time to cook fresh food every single day, because fresh food isn't just about the 15 minute act of applying heat.

Fresh food is about driving to the grocery store or the market and buying ingredients that aren't rotten. Fresh food is about cleaning up the entire kitchen every single meal because there's only a few hours until the next meal where you need to do it all over again. I will look up some recipe and then it requires a bit of many ingredients that I would not use again. Like a tablespoon of some sauce that I would only use for one recipe that is only sold in big bottles.

If you have your ingredients then first you need to wash your vegetables and then peel them and then cut them.

You might need to use several pans and coordinate everything.

Also dealing with raw meat requires you to be careful for it to not come in contact with anything that won't be washed or cooked.

Also sometimes making one recipe will be more expensive than going to the restauraunt.

From what I read in this thread the problem a lot of people have is falling for the recipe meme and expecting good results asap (like trying to paint a masterpiece before learning how to mix paints).

Failing tutelage from a friend who can cook (and I mean really cook not "hurrr my chilli is the best bro"; look for a friend with a vast array of professional cookbooks or restaurant experience), beginners should think of simple dishes like pasta aglio e olio, and instead of just following a recipe, research the dish (wikipedia, watch multiple videos on youtube, read 3 or 4 recipes but don't give majority credence to any single one) and attempt to make the dish. The investment should be cheap as success may not come immediately. Research your failings and continue attempting the dish until you have a breakthrough. Then try with another cheap, simple dish (stir fry maybe) and so on until you feel comfortable.

Me personally, it's because I share a small kitchen with 4 people, (Parents and sisters). I enjoy cooking, but a constantly messy kitchen (like, vile. My family are slobs. Dishes always stacked in the sick, don't clean spills.) and constantly broken/damagaed/dull/missing equipment makes it so hard.

I love cooking, but I have the luxury of time. Eventually, I won't have much time (especially in the mornings).

A lot of people I know make a shitload of money, have amazing kitchens, but don't have time to cook. They work so much, and are so exhausted all the time.
