If your goal is to produce food then sure, his videos are fine. If your cooking for a hobby and wanting to understand how things actually happen then yes, half of the shit he says is flat out wrong. Letting protein get to "room temperature", touching steaks to test doneness, not salting raw egg to "keep moisture in", etc. are nonesense lines that professionals trot out all the time. If your cooking for a hobby then you can afford to not listen to dumb bullshit.
