Why is a food as unpretentious and simple as chili something people sperg out so fucking hard over? Just the mention of the type of meat you're using or if you're including/not including beans is enough to spur people into an impassioned fury.

Chili was literally created as a 19th century cattle drive MRE. It was beef pounded with salt and chili peppers formed into transportable blocks and dried. It was rehydrated on the trail. Anything else, including "muh texas chili competition promuhfessionals" is adulterated bullshit.

>3 poblano
>15 ancho
>5 quajillo
>1qt crushed tomato

>.5lb red beans
>2Tbsp cumin
>2Tbsp black peppercorn
>1Tbsp coriander
>1oz fresh oregano
>3 bay leaves
>2qts beef stock
>sea salt to taste

Reconstitute and puree dry ancho and quajillo
Prepare beans seasoned with bay leaves
Brown meat
Add diced onion poblano and minced garlic
Saute
Add tomato chilie puree and dry spices
Simmer
Add drained beans stock oregano and salt

Sure the original block was meat chilies amd salt but during the rehydation stage...the "cooking" of the chili...any number of things would be added to include wild onions, garlic, fresh herbs, and yes... beans.

Because the 4 southwestern boarder states each have unique and valid histories with the dish therefore there are 4+ versions that are "right" and there will never be a consensus. On top of that it became a national dish because of cattle drives initially and then was written up in every domestic cook book by the 20th century so there's also 100+ year old traditions at the opposite end of the country like Wisconsin. It's as American as apple pie or hamburgers or pizza (all of which have infinite variations) I guess having no "right way" is the single most common trait among American food.

Because it's a popular food that varies wildly by region. You see the same thing happen with other foods like that: pizza, BBQ and tacos/burritos. When you say chili (or pizza, BBQ or tacos/burritos) it can mean different things to different people depending on where they're from and their experience. If you're referring to a specific style you have to point that out, which comes off spergy. But it's relevant if you happen to really like oneregional style but think some other styles aren't all that good or are even terrible.
