A lot of chain coffee places over-roast so they can use less coffee and still have a ‘full strength’ flavor. However, the true cognoscenti can pick over roasted right away.

Medium roast is generally more flavorful, since the coffee loses this as it gets more roasted. That being said, if your "medium roast" coffee beans are from Starbucks, they're completely burnt and not really medium roast.
